Local Sources

Medium-dsc00113

Since 1992, Big Sky Cafe continues to work hard to better ourselves, the community and the environment with the choices we make:

- Our seafood selections are sustainable
- We recycle all glass, paper, cardboard, metal & plastics through Allied Waste
single stream services
- Wine corks are given to Rewind Your Wine program
- Vegetable oils are re-vitalized at Kelley Green Bio-Fuel
- We proudly match 20% of all funds donated to charitywater.org
- We support clean renewable energy as a Platinum Member of Pure Power at AmerenUE  with 20% of our electrical energy provided by clean & sustainable resources
- We compost all organic waste through Blue Skies Recycling

We believe it is our responsibility to source the best possible options when creating and preparing a menu.  That includes having close relationships with partners who provide sustainable seafood and seasonable, local produce.

100% of our chicken is from Buttonwood Farm | 100% of our eggs are cage free from local farms | 100% of our pork comes from Geisert Farms | 100% of our bread comes from Breadsmith

Other partners include:

Claverach Farms - Eureka, MO
Troutdale Farms - Versailles, MO (100% of our trout comes from here)
Scott Harr’s Family Farm - Carondolet, IL
Marcoot Jersey Creamery - Greenville, IL
Ozark Forest Mushrooms - Big Springs, MO

Schaefer Family Farm - Millstadt, IL
Rain Crow Ranch - Doniphan, MO
Alan & Betty Nolte - Gasconade County, MO

...and a very special thanks to Andy Ayers of EatHereStLouis who has been a leader in bringing local foods to our tables as a broker for small Missouri and Illinois farmers.
